I put it in my oatmeal nearly daily (with almond butter, coconut and craisins), but I still had a bit left. Decided that I would try and recreate one of my favorite See's candies, the pineapple truffle.<br />

With the boy needing more snacks that are wheat and corn free, I knew what needed to be done first. I went back to my quick bread ratio for a starting place. Made sure I had lots of chocolate (he says there isn't enough). The only thing missing, in my opinion, is some coconut sugar, And maybe more pineapple.</div>

Preheat oven to 350 degrees F. In a medium size bowl, combine pineapple, cooled coconut oil, and eggs. Set aside. In a smallish bowl, stir together flours, cocoa powder, baking soda and sugar. Pour slowly into egg mixture and stir until combined. Add chocolate chips (the boy says add more than called for) and pecans/almonds if you want. Grease four small loaf pans, and fill with batter. Bake for roughly 40 minutes or until a testing tool comes out clean. Cool and enjoy!</div>

Note: I would add maybe another ounce of pineapple to the batter and/or make a glaze (powdered sugar and pineapple juice) to pour over the top to increase the pineapple flavor.</div>

I drove myself both there and back. It was really a rough journey for me physically. I had worked myself into a pretty bad migraine that kind of stuck with me through the whole event. Makes travel difficult on the best of days.<div><br></div><div>That said, I had a fantastic workout on Thursday with a few hundred people and Chalene Johnson. I don't share publicly often, but I suffer from severe PMS fatigue for about a week every month. Takes every ounce of energy I have to just make it through a normal day. Working out helps, but sometimes there just isn't that energy there. Add to that some sort of creeping crud/cold/allergy thing going around our house, and somehow I have been very out of it.<br />

That said, week 5 went pretty well. I got in three work outs with Go for it, and two with Livin' in the 8's. That latter is dang hard. Gah!!<br />

I had just injured myself, and the first time through it got worse. I ended up taking off four days to recover, and by Saturday I was able to make this video. Getting enough calories became an issue, and I had slightly less than 1000 most days. It is feeing like high school all over again. I am not hungry, and feel guilty for not eating. I ended up doing four You Got This routines. Then I added in the Jericho McMatthews work out in Beachody on Demand, and some country line dancing with my Wii to round out my workouts. Can I tell you that I loved the Jericho workout? Made me love yoga again. It was a good week. I didn't have any sweets so that is a win!<br />

Week 3 didn't go as well unless you count the fact that I started actually hopping during trips, and then jumping on the other moves. It was exciting! Then I hurt my knee. Again, I got in four of the Full Out workouts. I added in an ab rouitne from Hip Hop Abs and a 20 minute TurboFire workout to round out my week. I ended up doing over 23, 000 steps on Saturday, which is just over 9 miles. Didn't help my knee much. Rest day on Sunday ended up with meeting my step goal, and I thought m kee was better. Wrong. I am now sporting a fantastic knee brace. Go me!<br />

I am a huge fan of Sherrilyn Kenyon specifically, and supernatural romantic fiction in general. So when she came out with a YA book based on a character from the Dark Hunter series, I was super excited. I love when I find a good YA series, and this one has not failed me yet. <br>

I finished book one this past Saturday. I realized that I read it just last year in prep for the launch of the last book. I mention this because I have read it three times in less than 2 years. Might be the sign of a great series, right?<br>

The main character is Nick Gautier. A street smart, smart talking, teenager who has no idea that he is a supernatural being until one day his school starts being overrun by living zombies. Cool, right? The story follows our unexpected hero as he fights zombies, meets a girl, and finds friends and support in unexpected people. <div><br></div><div>This is definitely a teen read, in my opinion. I rode my bike everywhere, skated or walked when the bike wasn’t feasible. I was a healthy kid. Even when puberty hit, and I got these child bearing hips I was still comfortable with who I was. Then something happened in high school. I started to be self </span><span class="NormalTextRun SCX33334194" style="background-color: inherit;">conscious</span><span class="NormalTextRun SCX33334194" style="background-color: inherit;"> of my big butt and breasts. I felt fat. I went through two bouts of borderline anorexia. Lunch would be an apple and a small Pepsi. I wouldn't eat much more. I was depressed, and had suicidal thoughts. The raging migraines didn't help. I kept going through college where I continued to feel more insecure about my body, which wasn't helped by not ever having any dates and the belief that I wasn't attractive to the opposite sex. By the time I hit grad school in 1997, I was over 180 pounds. The year before I had my son I was at an all time high of 225, and finally worried about my weight. That was 2003 when I discovered Jazzercise, and decided to try portioned eating. In that year, I gained some of me back, and lost 25 pounds. The same 25 pounds I gained while pregnant, but because I continued with Jazzercise and my portioned eating (bbq chip craving the exception) a week after giving birth I weighed 9 pounds less than when I got pregnant. It was a big change, and a stressful one. Four years later, I was depressed, and feeling like I had no worth at all after losing my job. It was compounded over the next year as I applied for jobs in state and out within my field, which all the job aid people told me I needed to do. There was nothing out there for me, and then in the middle of this my friend Sarah started about this awesome thing called Beachbody and an amazing drink called Shakeology. I was still unemployed, drinking soda like it was water, and gaining weight every day. Something struck me though as I continued to follow Sarah, and when she was having her second child I signed up as a coach. I was unemployed for another year, but despite the horribleness of that I know it allowed me to establish the road to a better, healthier me. It hasn't been all rosy. I struggle to stay true to my food choices, and I don't always win the battle. My weight goes up and goes down. I will add that certified Beachbody instructors come in all shapes and sizes.</div><div><br></div><div>Three years ago, I was over the moon when I got certified to be a S.T.R.I.D.E. Instructor until a mean spirited person pointed out that basically they let fat people teach. Given that I was the only person in that group photo that was overweight, I knew it was directed at me. It really hit me hard. Yeah, I am not super thin or even really super fit, but I worked hard during that day. Could I do the same things as the other girls? Nope, and I still can't do quick burpees. I am an amazing dancer AND I am constantly pushing myself to improve. Weeks five and six of TurboFire were rocky, and in the middle of six I was slammed with a summer cold. Seriously wiped me out, and is till killing me. Week 7? I got exactly one workout in, and overslept my alarms every single day.<div><br></div><div>I wasn't eating as well as I should, but it didn't seem to matter as I have developed a digestive issue that takes 2/3 of my meals out of my system before I get all my nutrients. I have been frustrated with my self and my body.</div><div><br></div><div>As I was debating doing week seven over again, I saw a post by a coach I admire. She admitted to falling off the wagon, and said she never went back and re-did the missed or bad weeks. She just kept moving forward. The goal was to be a size 12 by Mother's Day. <div><br></div><div>Why a size? I have been a 14 for almost two years, and it is frankly depressing. I know why I haven't moved down. The extreme fatigue and dizzy spells that started in 2013 really halted everything. I could exercise sporadically, because I just never knew when a spell would hit me. With the help of my fabulous naturopath I am slowly getting better, and I am close to finishing a second round of The Fix. </div><div><br></div><div>Did I meet my goal? They are snug, but those capris are a 12. Next up? Starting a 90 day program. That said, I did end up spending an hour of active time in the garden today. I got the last of the five varieties of strawberries in the ground. That would be abut 25-30 plants per variety, and about four hours of work digging holes deep enough to keep our roots straight. Today I started on the tub of mammoth sunflowers. Only got nine in the ground. This is going to take awhile. Wednesday evening my boss asks me to come in for a 5-9 am. After consulting with my family, I agreed to this. So I get home at almost 10:30. I put together my meals (breakfast, lunch, dinner, snack), and pack my boy's lunch for the following day. Then catch a shower and four hours of sleep. Yes, you read that right. Four hours of sleep.<br />
<br />
I was up at 3:30 and out the door by 4:20. Then my boss provided fresh, like still warm from the oven with melty frosting, apple Danish. I ended up having two pieces. After work I rushed over to the base so I could get in day 3, week 1 of Ease into 5k done on the track. I had promised the boy to do it. I ended up getting 1.79 miles, and a pretty good average mph. And I was able to clean up, change, and scarf down a yogurt to clock in for a 10 a.m. start.<br />
<br />
A nice day at work included a fantastic meal, and about 8 Jelly Belly Belly Flops. And more coffee. So tired I nearly passed out at work. Clock out at 6:30 to rush and get the boy and nephew from their youth group. Snack dinner of deli turkey, cheddar cheese and wheat thins in the car while waiting for them. No shake today, because by the time I made it home and through showers and homework I was ready to pass out.<br />

I woke up with time to get my sister up, poke at the nephew and son, get my workout clothes on, and then push those boys some more. They had breakfast and were ready for the bus with ten minutes to spare. It was awesome! <br />
<br />
Here's the transformation part. I went up to the attic to complete day 16 of the 21 day fix, which is upper fix. While my disk loaded, I unwrapped my new weights. I transformed my weights from zero and 2 pound to three and five pound weights. I am sure my arms will be jelly tomorrow, but it felt so good to make that progress.<br />
<br />
I tried very hard to hold onto this feeling as I realized when I was ten minutes from work that I didn't have my military identification on me. This meant I had to drive all the way home and back, which resulted in me being 40 minutes late. Top this off with some serious hormone surges, and I was a wreck. My take away from this is to not deviate from the plan, i.e. <strong>always</strong> wear/place put important stuff in the same place. It is important to adhere to some of these rigid structures to enable us to grow, and do the things we need to do without having to worry. There you go, a Tuesday thought, as well!<br />

It has, also, been filled with farmer's markets, which in this house means leftover sample jars of jams and jellies that need to be used up.<br />

These jars are from my mom and aunt's business, Hundred Acre Farm. They added a fourth market this summer, which has increased the number of little jars in the fridge. The fruit ones get ten eaten easily enough. The herb and pepper ones not so much since I am really the only one in this house that likes them. This recipe was born from trying to figure out what to do with those jars.</div>

Last year with the move and the craziness of December, we never got to the friend party. So we decided to host a half birthday party this past weekend. It was a beautiful day complete with a huge bounce house, pizza and eleven kids ranging in age from 4-10 plus one infant.<br>

The Monkey had seen a dessert pizza in one of the cooking magazines that lay around our home. We ended up with something slightly different, but the results were phenomenal. I had kids asking for seconds and thirds. The base of it was<a href="http://bellwookie.blogspot.com/2010/12/grandma-darlings-sugar-cookies.html" target="_blank"> Grandma Darling's Sugar Cookies</a> pressed into three 9-inch pie plates. We were playing with it in this new form so really aren't sure how long to bake. Start with 10 minutes and add on until the edges start to turn golden. Cool and add white chocolate frosting, 2 tablespoons of corn free strawberry jam, and 4-5 strawberries cut like pepperoni. Coconut flakes are optional.<br>

<b>White Chocolate Frosting</b><br>

1 stick butter, softened<br>
4 oz. white chocolate baking bar, melted (I used Hershey's)<br>
3 cups powdered sugar<br>
2-3 tablespoons almond milk<br>

Beat butter until creamy. Melt the chocolate in a glass bowl in the microwave. Two minutes was just about right for just getting to the liquid phase. Again by 15 second intervals to ensure that you don't burn it. Add the powdered sugar by 1/2 cup increments. Beat in white chocolate. About a week ago, I had the rare opportunity to be off on a Sunday morning. I got to attend church for the first time since Easter, and then went with my family to a farmer's market at a local orchard. I was excited to see what fruits might be available since I knew I needed something for this challenge. The only fruit there though were these Baldwin apples. Picked them up even though I had wanted to do something a little more exotic than apple cobbler. </div>

Preheat oven to 350 degrees F. Place butter in a pie plate, and put in oven while putting together everything else. Combine apples, cranberries and cinnamon in a small bowl, and then set aside. In a larger bowl combine, sorghum, teff, cocoa, baking powder and sugar. Add milk slowly and stir until just combined.<br />

A lot of recipes I looked at said to just pour this batter over the top of the melted butter in your pan. I decided to combine it in. You can do it either way. Spoon the fruit carefully on the top. Place in oven and bake at 350 for about 75 minutes. Remove and cool. <br />

Boil water for making the tea. Add to one tea bag in your glass measuring cup. Steep for 30 minutes, and remove bag. Set aside. In a large bowl, combine all the dry ingredients thoroughly. Add all wet ingredients, and stir until just combined. Bake at 350 degrees F for 60-75 minutes. Remove from oven and cool. Makes one large and one small loaf.<br />
